Coconut Curry in 7 Steps

Enjoy Coconut Curry on your table in as easy as 7 steps. 🥥🍛🌱
I love a good curry & it’s so easy to switch it up and have a new taste every time. Add your fav veggies for a fresh bite and a tasty dish perfect for cold winter nights.
Ingredients:
-3 garlic cloves
-1/2 chunk of ginger
-1/2 a red onion
-1 full zucchini
-1 full red pepper
-1/2 head of cauliflower
-1/2 head of broccoli
-2 cups spinach
-1 can of coconut milk
-1 full can of lentils
-olive oil
Spices:
-1 1/2tsp. curry powder
-1 tsp parprika
-3/4 tsp. cumin
-1/2 tsp. chili flakes
-salt & pepper to taste
Step One:
Finely chop garlic, ginger and red onion and add to a hot, oiled non-stick pan on low-medium heat.
Step Two:
Add chopped red pepper, zucchini and cauliflower to the sautéd veggies. Let cook on medium heat.
Step 3:
Prep your spices by measurement and place in a bowl to create a spice blend. Add a 1/4 cup of coconut milk to the bowl and stir to create a paste-like texture.
Perp you lentils by opening the can and rinsing the lentils.
Step 4:
Add the rest of your veggies: broccoli, spinach and add the full can of lentils. Cook on low-medium heat until tender.
Step 5:
Add the spice blend paste to the veggies drizzling evenly-ish. Then add the reminder of coconut milk and stir together until evenly coated.
Step 6:
Let the curry simmer for 3-4 minutes.
Step 7:
Serve the coconut curry over quinoa or brown rice. Garnish with finely chopped green onion or your favorite fresh herb. Enjoy!
