Spaghetti Lentil Bolognese - Pasta, Yes Please!

Ever have one of those nights where you're just craving some good ol' pasta and sauce. I get this craving every few weeks and this recipe is perfect for kicking this craving and giving you traditional spaghetti vibes - but healthier and better.


Ingredients:

-1 packet brown rice spaghetti (or whatever type of pasta you love)

-1 can of diced tomatoes

-1 cup of dried red lentils

-garlic

-red onion

-nutritional yeast

-paprika

-red chilli flakes

-oregano

-basil

-onion powder

-garlic powder

-olive oil


The steps to make this recipe are:

Step One:

Add 1 cup of dry red lentils to your instapot for the recommended cook time (usually 3-5 minutes). While the lentils are cooking, dice the garlic and red onion, then add to a hot large pot with olive oil on low/medium heat until golden.

Step Two:

Add a can of crushed or diced tomatoes (I always get the unseasoned kind, I love to add my own spice blend). I add in the spices here: oregano, basil, onion and garlic powder, paprika, red chilli flakes and sometimes a good dash of hot sauce - and always salt & pepper to taste. Stir and let simmer for 15-20 mins on low-medium heat. Make sure to stir occasionally to avoid overcooking.


Step Three:

Turn the sauce burner off and let cool uncovered for a good 20 minutes. By now, the water will be boiled and the pasta can also start cooking. While this is happening, on another burner fill a pot with water for the pasta on medium heat.


Step Four:

When the pasta is about finished cooking, I love using my hand-held blender to blend the sauce together for a smooth sauce. Once fully blended, drain the pasta and you're ready to serve.

Step Five:

Serve up your spaghetti lentil bolognese! First, add a good swirl of pasta to the plate, then I top with a hefty serving of lentils and smooth them flat for an even coat of sauce. I like adding my sauce and lentils separate so if there's leftovers of one or the other, I can reuse the ingredients for another recipe.


Top with nutritional yeast, green onion or any fresh herb for a delicious meal any day of the week!
